Home brewing equipment choices matter, but no equipment purchase compensates for inadequate sanitation — the single factor most responsible for whether a homebrewed batch turns out well or gets contaminated.

Sanitation matters more than any equipment upgrade

Wild yeast and bacteria are present on nearly every surface, and if they contaminate a batch during brewing, they can produce off-flavors or spoil the beer entirely, regardless of how good the ingredients or equipment used were. Thoroughly cleaning and then separately sanitizing (a distinct step from cleaning) all equipment that contacts the beer after the boiling stage is the single most consistently cited factor separating successful homebrew from disappointing or spoiled batches — more important to the final result than upgrading to more advanced equipment.

Extract vs. all-grain brewing is the core beginner decision

Extract brewing uses a pre-made malt extract as the fermentable sugar base, significantly simplifying the process by skipping the extraction step that converts grain starches into fermentable sugar — a much more approachable entry point requiring less equipment and less total time per batch. All-grain brewing starts from raw malted grains, requiring additional equipment and a longer, more involved process to extract fermentable sugars from the grain itself, but offering more control over the final beer's exact character and ingredients. Most beginners start with extract brewing to learn the fundamental process — fermentation, sanitation, bottling — before adding the additional complexity of all-grain brewing once comfortable with the basics.

Fermentation temperature affects flavor more than most new brewers expect

Yeast produces different flavor compounds at different fermentation temperatures, and many yeast strains have a specific recommended temperature range for the cleanest, most intended flavor profile — fermenting too warm can produce noticeable off-flavors (often described as fusel alcohol or solvent-like notes) even with otherwise correct technique and quality ingredients. Controlling fermentation temperature, rather than simply letting a batch sit at whatever ambient room temperature happens to be, is a genuinely impactful factor many beginners underestimate relative to ingredient quality.

Bottling introduces its own real considerations

Priming (adding a small, carefully measured amount of additional sugar before bottling) allows a final carbonation fermentation inside the sealed bottle — using too much priming sugar can produce dangerously over-pressurized bottles, a genuine safety concern with a risk of bottle rupture, not just an over-carbonated beer. Following a proper priming sugar calculation for the specific batch size, rather than estimating loosely, matters for both quality and basic safety.

The one thing people forget

Keep detailed notes on ingredients, quantities, temperatures, and timing for every batch, especially as a beginner — without a record, it becomes very difficult to identify what specifically caused a particularly good or particularly disappointing result, and much of the real learning in home brewing comes from being able to compare a new batch's process against previous ones with enough detail to actually pinpoint what changed.
